Simple and Sweet

Rocky Road Squares

In last week's chat someone asked for a sweet and simple recipe - my little nephews made me this for my birthday - so I can personally recommend it! :-)

Preparation time: 15 minutes plus chilling.
Makes: 12-16 squares.

Ingredients

  • 225g (8oz) unsalted butter
  • 100g (3.5 oz) plain chocolate
  • 2tbsp golden syrup
  • 2tbsp cocoa powder
  • 2tbsp caster sugar
  • 100g (3.5oz) sultanas
  • 100g (3.5 oz) chocolate chips
  • 100g (3.5 oz) mini marshmallows
  • 225g (8oz) digestive, gingernut or chocolate chip biscuits, crushed.

Method

  1. Lightly grease a 18cm (7inch) square by 5cm (2inch) deep baking tin.
  2. Gently melt together the butter and plain chocolate in a large saucepan. Stir in the golden syrup, caster sugar and cocoa powder and mix to a smooth consistency.
  3. Stir in the biscuit crumbs and sultanas, then leave the mix to cool a little. Then add the chocolate chips and half the marshmallows.
  4. Evenly spread into the prepared tin and scatter the remaining marshmallows, pressing into the mix.
  5. Cover and refrigerate until set, then cut into squares and enjoy!

  • This recipe is great Ceri...and to make it coeliac (can't eat gluten) friendly, just swap the biscuits for gluten free ones (or take them out completely), And the HIP HIP HOORAY a fantastic choccy treat for gluten free people!
    • Cool so I can make it for my cousins - do we need different cooking chocolate???

    • You may do...I'm afraid I forgot thatbit, just check the backs of the packets. It should all be clearly labelled, the law is pretty strong on that.
